Chocolate Chunk Cookies

  1. Set over to 355F / 180C
  2. Melt the coconut oil
  3. Chop the chocolate
  4. Whip the oil and sugar together
  5. Pour in plant milk
  6. Add the peanut butter and continue mixing for about 5 minutes
  7. Add in the spices, baking powder, and baking soda
  8. Add the flour and chocolate chunks, mix a bit and then knead by hand to finish
  9. The dough should not be crumbly as all, but slightly oily and easy to form
  10. Separate into 18-22 balls onto an oven tray
  11. Bake for 15 mins at 180c, then lightly press them down with a spoon (don't flatten, just give them a vaguely cookie shape), and cook for 2 more minutes
